In Tunisia, and more specifically in the Sahel region, whose name is associated for over ***0 years the olive tree, symbol of peace and prosperity, a Tunisian olive farm owners, began before ***8 the extraction of Olive oil by traditional methods. They have invested in this activity their greatest interest and expertise and have continued since to develop this work by improving production systems to achieve a high quality standards and retain the authenticity of the product by giving a  special care to the various phases of production.
The extra virgin olive oil  comes from the sunny hills and plains of the southern mediteranean region, planted for centuries by caring hands and carefully picked the months of November and December, at the time when olives reach their optimal degrees of maturity, harvest is manual to get healthy fruits and guarantee the production of the best oil in the world.
The same day, they are transported in crates to ventilated "oil press" where  they will be selected with great care. Then they will be defoliated and washed with clean water before being crushed and kneaded. The oil will be separated from the olive paste by cold pressure in order to preserve its taste and flavor.
While the extraction process is driven by a mechanical system made of stainless steel. The storage of the oil is made in vats sub-ground ceramic to ensure its customers, extra virgin olive oil of  high quality with low acidity and a fruity taste.
