Glutathioneis a tripeptide compound condensed by glutamic acid, cysteine and glycine through peptide bond. It is the most important low molecular mercaptan under antioxidant stress in mammalian cells. The appearance is colorless, transparent, slender granular crystal, soluble in water, dilute alcohol, liquid ammonia and dimethylformamide, insoluble in ethanol, ether and acetone. When solid, its properties are stable, and its aqueous solution is easy to be oxidized to oxidized glutathione in air. It widely exists in baker's yeast, wheat germ, animal liver, chicken blood, pig blood, tomato, pineapple and cucumber. Among them, wheat germ and animal liver are the highest, with a content of 100 ~ 1000mg / 100g.
It has the functions of anti-oxidation, scavenging free radicals, detoxification, enhancing immunity, delaying aging, anti-cancer, anti radiation damage and so on. It also helps white blood cells kill bacteria, prevent vitamin C and e oxidation, and prevent stroke and cataract formation. In addition, glutathione can bind carcinogens and excrete them through urine.
