 Kopi Luwak is considered as the most expensive coffee in the world. The high cost of the coffee is due in part to its scarcity, because only limited quantities of kopi luwak beans are produced each year. This makes the coffee the rarest and the most exclusive coffee in the world. It is made from coffee berries eaten by and passed through the digestive tract of the Asian Palm Civet known as the Luwak in Indonesia. It is a small, mottled grey and black viverrid that utilises fruits such as pulpy berries as a major food source. By eating only the ripest cherries, the animal makes the same selection an expert would make in picking the best coffee beans.
The enzymes of the Asian Palm Civet add to the flavour by breaking down any residual bitterness. After defecation, these partially digested beans are collected by Indonesians villagers turning gross into gourmet. The incredible nutty taste of the Kopi Luwak is a coffee lovers dream.
