Melon seeds(White): (Egusi as referred to in Nigeria) is the name for the protein-rich seeds of certain cucurbitaceous plants (​squash, melon, gourd), which after being dried and ground are used as a major ingredient in West African Cuisine.



They are a rich source of proteins, vitamins, omega 3 and omega 6 fatty acids, magnesium, zinc, copper, potassium and more. These seeds are high in calories though, so you need to mindful of your portions. One cup of roasted watermelon seeds contains roughly **0 calories.



The melon seed has a lot of advantages among which are the following: the oil extracted from it can be used in the manufacturing of margarine, shortening and cooking oils, while the residual cake is a useful source of protein for livestock feed.
