Phytase is a clsaa of enzymes which can degrade phytate into inosito and inorganic phosphoric acid. Phytate widely exists in kinds of plant feedstuff and it is a full cyclic structure of phosphoinositide. Its chemical name is inositol-hexaphosphate IP6, the chemical formula is C6H****4P6 with a weight of **0.8. It has so strong chelating capacity that it can form insolube complexes with Cu2+Zn2+Mn2+Ca2+.Consequently, it reduct the utilization of Calcium to *5% and Zinc to *4.1%. The organic phosphorus in plant feed exist mainly in the from of Phytase. Due to lack of phytase, phytate cannot be effectively utilized by monogastric animals. For example, the pigs can only use *2% and *3% of phosphorus of corn and soybean meal respectively.
