It is thus possible to achieve an untreated starch with a high degree of purity - physically, chemically as well as microbiologically. Potato starch is often used as a substitute for corn starch for making many baked goods. Potato starch is gluten-free and can be used as a thickener to thicken sauces, soups, and pie.
