DESICCATED COCONUT CLASSIFICATIONS

Regular/Granular Cuts
Medium:Used in fillings for candy bars, toppings for cakes andpastries, andingredientsforinstitutional foods, cereals, andcookies.
Macaroon: A fine granular cut used for macaroon candies, cakesandcookies,toppingsandhome cooked recipes.
Extra Fine:Very fine grains of desiccated coconut used forcakes,pastries,cookiesandbiscuits.

Special/Fancy Cuts
Flake:(1/2 - 1 inch lengths) Used for bakerytoppings,coconut tea,decorationsand
confectionerycenters.
Mill Run Chip: Used forspecialtyconfectionery snack packs and trailmixes.
Fancy Shred:Used forbakerytoppings anddecorations.

STORAGE AND SHELF-LIFEStore at ambient temperatures  of ****0ËšF.  Store in an odour free room away from sunlight. Avoid storage in high moisture areas. Best to use within guideline period from
production date as follows:
1. For Regular SO2Concentration- Within one year
2. For Low SO2 Concentration - within 8 months
3. For SO2 -free- within 5 months
