Introduction







 



 
Tamarind Kernel Powder is obtained from the seeds of the plant Tamarindus Indica. The tree is usually about 5 meters tall but can also get as high as *5 meters. It stays evergreen without a dry season and is covered with pinnate leaves, pale reddish-yellow flowers and pods. The pods are **6 inches long with ***0 seeds in each.







 



 
 







 



 
Manufacturing Process







 



 
Tamarind seeds are broken. The hull is removed through heating, grinding and sieving. The endosperm is separated from the germ through grinding and sieving and is then pulverized to get a fine powder called Tamarind Kernel Powder.







 



 
Properties







 



 
Tamarind Kernel Powder is a polysaccharide consisting mainly of D-mannose and D-galactose units. The powder is odourless and appears creamish white.







 



 
It has a high capacity of water absorption and can retain a stable viscosity over a broad pH range.
