Physicochemical Property
Soluble in water, ethanol, propylene glycol, but insoluble in oil.
Application
Used in drinks, shaved ice, confectionery, fruit preparation, jam, pectin, meat products and other foods with low pH value. It is red or purple when pH value is below 3.5, and it appears purplish blue or blue when pH value above 3.5 or higher.
Storage
Refrigerated; avoid heat, light and oxygen.
