Sterilizing
principle： Within a certain temperature range,
the lower the temperature is, the slower the breeding rate of
bacteria will be and vice versa. However, if the temperature is too
high, the bacteria will die. Different bacteria have their
different best growing temperature and heat and cold resistance.
Pasteurization sterilizes all the bacteria with proper temperature
and soaking time, making use of the inability of heat resistance of
the pathogen.
