Fruit jam

Description

A thick fruit spread made with fruit pieces and sugar that are cooked and reduced until thickened into a medium textured spread. The cooking process concentrates the flavor and changes the fruit pieces (chopped or pureed) into smaller, softer bits that spread easily onto bread and toast.

Jams are coarser and thicker in texture and contain more of the actual fruit pieces than the jellies do. They are rich in flavor and have a spoonable texture perfect for topping homemade bread.
Jam consists of fruit that's crushed or chopped and cooked with sugar (and sometimes pectin and an acid) until the pieces of fruit are soft and lose their shape. As the mixture cooks, water evaporates and it thickens to a spreadable consistency, though it still may have some pieces of fruit.
