Digital vertical automatic extraction batch freezers with electronic control of the correct consistency of the ice cream. That has capacity of developing **5 litres pf ice cream per hour.  The algorithm elaborated for the torque control of the stirrer in Newton per meter makes it possible to obtain ice creams and sorbets with different structures and to control the operation of the compressor
