The cheese is made in the same way as in the XIII century, so the method of production has been the same for eight centuries. However nowadays the production is vigorously controlled on by a protection consortium, which guarantees the excellent quality of this cheese. The result is, that it has become a prestigious DOP (Denomination of protected origin) cheese, universally recognized not only for its incredible and unique flavor, but its unquestionably high nutritional value. This cheese has been aged for *4 months.
