●性状：呈无色至白色玻璃状的块或片，或为白色纤维状结晶或粉末，无臭、吸湿性强；在水中缓慢溶解，溶解度随聚合度而异，一般为0.**4%，水溶液呈碱性，溶于钠盐溶液，在稀的无机酸中可迅速溶解，不溶于乙醇；是高度聚合的直链型聚磷酸盐，可有少量呈环状结构的三偏磷酸钾和环状结构的四偏磷酸钾等存在；随着聚合度的增大，逐渐成为透明的玻璃状，吸湿性也随之增大。

●用途：在食品工业中用作水分保持剂、膨松剂、酸度调节剂、稳定剂、凝固剂、抗结剂、属食品质构改良剂、脂肪乳化、金属离子螯合剂、蛋白沉淀、水产调味组织改进剂、水的软化剂；用于鱼糜制品、冰淇淋、各种肉丸、火腿肠、香肠等食品工业的加工；鱼糜制品用量0.1%，冰淇淋，0.*3%～0.1%。
● uses: in the food industry for water retention agent, bulking agent, acidity regulator, stabilizer, coagulant, anti caking agent, which belongs to the food texture improvers, fat emulsion, metal ion chelating agent, protein precipitation, organize aquatic seasoning improver, water softener; used for the processing of surimi products, ice cream, a variety of Rice-meat dumplings, ham sausage, sausage and other food industry; surimi product dosage 0.1%, ice cream, 0.*3% ~ 0.1%.
