●性状：白色粉末，无臭；溶于盐酸，微溶于水，1％的水溶液PH值小于2.8。溶于水后，经过约4h，其溶解物中P2O5与Al的比值不同于原样品；当结晶的磷酸铝钠脱去结晶水时，其晶体结构重排，即使再水合，也不能恢复原有晶体结构。加热至**0～**0℃下，结晶酸或磷酸铝钠脱去结晶水，变成无水物。

●用途：食品工业中用于面糊、油炸面团、烘烤食品用作发酵膨松剂；还用作饲料添加剂以抑制家禽、家畜脂肪的生长，用作脂肪控制剂。

Applications: the batter, fried dough, baking food as a leavening agent for food fermentation industry; also used as feed additives in poultry, livestock fat growth inhibition, as fat control agent.
