Bacterial Alpha-Amylase Boli BAA is derived from submerged culture of Bacillus subtilisvar. through extraction and refining processes. It is a kind of endoamylase, which rapidly decreases the viscosity of the gelatinous starch solution by randomly hydrolyzing starch, glycogen and its degradation products within the alpha*1,4 glycosidic bond and produces soluble dextrin and oligosaccharide. Extended hydrolysis may result in a small quantity of glucose and maltose.
Boli BAA is widely applied to industries such as amylose, alcohol, beer, monosodium glutamate, soy sauce, pharmacy, foodstuff, textile printing and dyeing, desizing, etc. This product is divided into solid and liquid type by physical forms.

Effect of PH

Optimum pH value 6.0, stable pH range 6.0~7.0, inactivated dramatically with pH below 5.0.

Effect of Temperature
Optimum temperature range *0~*0°C, stable temperature below *0°C. At a temperature range of *0~*0°C, the reaction speeds up while the temperature rising, whereas the inactivation also speeds up.

Effect of Calcium
The existence of calcium ion plays a protective role for the stability of enzyme activity. The enzyme activity may disappear completely if without calcium ion. The pH range of enzyme activity is broadened with calcium and narrowed without calcium.

Inhibitors
Copper, titanium and cobalt ions are moderate inhibitors on this product. Aluminum, lead and zinc ions are strong inhibitors.

Usage Guidelines
Firstly, adjust pH value of the starch slurry to 6.0~6.4; Secondly, add 0.2% anhydrous calcium chloride (dosage should be calculated according to the weight of raw materials); Then, add amylase 6~8U per gram of raw material, heat it to *0~*0°C for liquefaction for about *0 minutes. The actual dosage of this product depends on different raw material, substrate concentration, process methods and conditions, desired results of different plants and other factors. To optimize the dosage, it is recommended to conduct a number of liquefaction trials prior to the routine use of this product
